What does a roast date actually tell you? More than any word on the front of the bag. I co-own a small coffee roastery in Red Hook, and once a year I visit the farms we buy from. Before that I was a lab tech in food science, then a barista, then an assistant roaster; the lab habits stuck. Here I write about coffee, tea, sourcing and brewing: tasting notes described precisely, origin and processing explained, and brew advice built on changing one thing at a time. I live in a walk-up in Bed-Stuy with my girlfriend, Priya, a shelf of sample jars and a crate of records, and I ride to the roastery most mornings. The label tells you what. The cup tells you why.
