☕ How to Make Better Coffee at Home: 7 Simple Fixes

Seven easy changes to beans, grind, water and ratio, each explained through one word from the coffee bag, with a ratio table and a cheat sheet to save.

You buy decent beans, follow the bag, and the cup still comes out flat, sour or bitter. The bag was full of words, and few of them told you how to brew it.

Here are seven fixes, each tied to one word from the bag or brew guide, plus a ratio table to keep.

7 fixes, one word at a time

  1. Roast date: the day the beans were roasted. Fresh beans rest a few days while they release gas, then taste best for a few weeks. A best-by date alone hides that.
  2. Whole bean: grind right before you brew, and keep the beans airtight and opaque in a cool, dark cupboard.
  3. Even grind: a burr grinder's two plates crush beans to an even size. A blade chops them into dust and chunks; the dust turns bitter while the chunks stay sour.
  4. Ratio: "1:16" means 1 gram of coffee per 16 grams of water. The Specialty Coffee Association's reference is about 55 grams per liter, close to 1:18.
  5. Extraction: how much of the coffee the water dissolves. Sour means too little, so grind finer. Bitter and hollow means too much, so grind coarser. Change one thing, then taste.
  6. Brew temperature: the SCA range is 195 to 205°F at the grounds. Cooler water brews thin.
  7. Brewing water: chlorine leaves a medicinal taint, and distilled water lacks the minerals that help pull flavor out. Filtered tap water works.

Matters or noise

Roast date, roast level and processing, such as washed or natural, change the cup. "Gourmet", "premium" and "intense" change nothing; none has a fixed meaning.

False friends: "dark" is roast level. "Strong" is how much coffee ends up dissolved in your water, and that comes from the ratio.

Hidden tips

Weigh, don't scoop. Dark beans are puffier and lighter, so in a Cook's Illustrated test a scoop of light roast brewed about 60% more caffeine than a scoop of dark, while equal weights came out virtually the same. At our roastery the scoop lives in a drawer.

Let it bloom. For pour-over, wet the grounds with twice their weight in water and wait 30 seconds. Trapped carbon dioxide escapes, so the rest extracts evenly.
