Supper is a few hours off, the chicken is still a frozen brick, and the counter looks like the easy answer. If that pack could talk, it would ask you to read this first.

Here are five defrosting beliefs, a verdict on each, and the three safe methods that replace them.

Myth 1: "A few hours on the counter is fine"

Verdict: false. Perishable food should not thaw on the counter at all, and past 2 hours at room temperature it is no longer considered safe.

Why people believe it: the middle is still rock hard, so it feels cold. Well, the outside is what counts. The outer layer warms into the danger zone, 4ยฐC to 60ยฐC (40ยฐF to 140ยฐF), where bacteria multiply fast.

Myth 2: "Warm water thaws it faster, so use warm water"

Verdict: faster, yes. Safe, no. Hot water does to the surface what the counter does. Use cold water:

  • Seal the food in a leak-proof bag, or the meat soaks up water.
  • Submerge it and change the water every 30 minutes.
  • About 500 g (1 lb) can thaw in an hour or less. A 1.5 to 2 kg (3 to 4 lb) pack takes 2 to 3 hours.
  • Cook it as soon as it has thawed.

Myth 3: "Once it's thawed, you can never refreeze it"

Verdict: mostly false. Food thawed in the fridge can go back in the freezer raw. It may lose a little texture, but it is safe. Food thawed in cold water or the microwave should be cooked first, then frozen.

Why people believe it: the rule is real for the fast methods. It just lost its first half.

Myth 4: "You have to thaw meat before you cook it"

Verdict: false. Meat can go straight from freezer to pan or oven. Plan on roughly 50% more cooking time than thawed or fresh, and check the middle with a thermometer.

Myth 5: "Defrosting in the microwave is unsafe"

Verdict: half true. It is safe if you cook the food right away. The microwave thaws unevenly, so thin edges warm up and can even start to cook while the centre is still frozen, which is exactly why you don't let it sit. Keep it for smaller portions.

The method that wins: the fridge

Slowest, but safest, because the food never leaves the cold. Allow about a day for every 2.5 kg (5 lb), and a day is usually enough for most cuts.

Hidden tip: fridge-thawed meat gives you breathing room. Ground meat, poultry and seafood keep another 1 to 2 days before cooking. Roasts, chops and steaks keep 3 to 5 days.

Hidden tip: thaw on a plate on the bottom shelf. Raw meat belongs below ready-to-eat food, so drips land on the plate, not the lettuce.

At the B&B, tomorrow's sausages go down to the bottom shelf before I go to bed. My grandmother called it putting breakfast to bed.

Save this: the scorecard

BeliefVerdict
Counter is fine for a few hoursFalse: 2 hours max
Warm water is fineFalse: cold, change every 30 min
Never refreezeMostly false: fridge-thawed can
Must thaw before cookingFalse: about 50% longer
Microwave is unsafeHalf true: cook right away
Fridge thawAbout a day per 2.5 kg
After fridge thawGround/poultry 1โ€“2 days, steaks 3โ€“5

Scorecard card: five defrosting myths and their verdictsThe three safe ways to defrost and what to do after each

Score: four false, one half true. If you keep one habit, make it this: give the fridge a day's head start.
