How Long Do Leftovers Last in the Fridge? A Simple Chart 🍲

A simple chart of how long common leftovers keep in the fridge and freezer, plus how to cool, store and reheat them safely.

You find a tub of pasta at the back of the fridge and stand there sniffing it while the cold air pours out. Was it three days or five?

Here is a simple chart of how long leftovers keep, plus how to cool, store and reheat them so the chart holds true.

One pot of soup, one honest mistake

Take Dana. She wanted to cook once and eat well all week, so she made a big pot of chicken and vegetable soup. The goal was sound, but the handling went wrong because each step kept the soup warm too long:

  • She left the full pot on the stove all evening, lid on, to "cool down first", then put it in the fridge at bedtime.
  • Each day she warmed the pot, ladled out a bowl and put the rest back.
  • By day six it still smelled fine, so she kept going.

Where it went wrong

Bacteria grow fastest between 4°C and 60°C (40°F to 140°F), the range Health Canada calls the danger zone. A deep, lidded pot holds heat for hours, so the middle of that soup sat there well past the two-hour limit.

Reheating the whole pot daily sent it back through the zone again and again. And her nose was no test: Health Canada says you cannot judge safety by look, smell or taste.

The fix

  • Cool fast: split big batches into shallow containers, about 5 cm (2 inches) deep, and refrigerate within two hours.
  • Lid off at first: leave them uncovered or loosely wrapped until cold, then seal.
  • Date the lid: I label leftovers the same as my jam jars, because memory is not a storage system.
  • Reheat one portion: to 74°C (165°F), and bring soups and gravy to a rolling boil. Health Canada says to toss reheated leftovers you don't finish.
  • Freeze extras early at -18°C (0°F). Thaw in the fridge or microwave and eat straight away.

How long leftovers keep

From Health Canada's leftovers chart, for a fridge at 4°C (40°F) or colder:

LeftoverFridgeFreezer
Cooked egg, meat or vegetable dishes3 to 4 days2 to 3 months
Cooked fish and poultry3 to 4 days4 to 6 months
Broth, stock and gravy3 to 4 days4 to 6 months
Soups2 to 3 days4 months

Hidden tip: cooked rice runs on a shorter clock. Food Standards Scotland advises chilling it within about an hour, eating it within 24 hours and reheating it only once, because spores of a common rice bacterium survive cooking.

The rule to keep

Most leftover trouble comes from slow cooling, not from one extra day. Warning sign: a big pot still warm in the middle hours after dinner. Well, that pot needs splitting up.
